Step-by-Step Instructions

1
Heat 2 tablespoons of ghee in a large saucepan over medium heat. Add 1 tablespoon of vegetable oil and let it heat for a minute.
2
Add 1 medium onion, diced, and sauté until it turns translucent. Add 1 medium carrot, peeled and grated, and 1 cup of peas. Cook for 5 minutes, stirring occasionally.
3
Add 1 pound of chicken breast, cut into small pieces, and cook until it's browned and cooked through. Add 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 teaspoon of cumin seeds. Mix well.
4
Add 2 cups of basmati rice, 2 cups of water, and 1/2 teaspoon of saffron threads. Mix well and bring to a boil. Reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is cooked and fluffy.
5
Once the rice is cooked, fluff it with a fork and garnish with fresh cilantro, a dollop of raita, and a sprinkle of toasted cumin seeds on top. Serve hot and enjoy!
