Step-by-Step Instructions

Rinse the sago pearls and soak them in water for at least 4 hours or overnight. Drain and set aside.

In a medium saucepan, combine the coconut milk, palm sugar and a pinch of salt. Heat over medium heat, stirring constantly, until the sugar dissolves and the mixture is smooth.

Add the soaked sago pearls to the coconut milk mixture and cook for 5-7 minutes or until the pearls are cooked and the mixture has thickened. Remove from heat and let cool.

In a blender or food processor, puree the mango until smooth. Strain the puree through a fine-mesh sieve to remove any fibers or pulp.
