Step-by-Step Instructions

1
Preheat the oven to 350°F (180°C). Line an 8-inch square baking dish with parchment paper.
2
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the prepared baking dish.
3
Bake the crust for 10-12 minutes, or until lightly browned. Let it cool completely.
4
In a large bowl, beat the cream cheese until smooth. Add the granulated sugar and beat until well combined.
5
Beat in the eggs one at a time, followed by the pumpkin puree, pumpkin spice, and salt.
6
Pour the cheesecake filling over the cooled crust and smooth the top. Bake for 25-30 minutes, or until the edges are set and the center is slightly jiggly.
7
Let the cheesecake cool completely in the baking dish. Once cooled, refrigerate for at least 4 hours or overnight.
8
Once chilled, lift the cheesecake out of the baking dish using the parchment paper and cut into bars. Serve chilled and enjoy!
