Step-by-Step Instructions

1
Rinse the basmati rice in a fine mesh sieve until the water runs clear, then soak it in water for at least 30 minutes. Drain and set aside.
2
In a large pan, heat 1 tablespoon of ghee or oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
3
Add the onion, ginger, and garlic to the pan and sauté until the onion is translucent, about 5 minutes.
4
Add the chicken to the pan and cook until it is browned on all sides and cooked through, about 5-7 minutes.
5
Add the coriander powder, turmeric powder, red chili powder, and salt to the pan and stir to combine. Cook for 1 minute.
6
Add the soaked basmati rice to the pan and stir to combine with the spice mixture. Cook for 2-3 minutes.
7
Add 2 cups of water to the pan and bring to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
8
Fluff the biryani with a fork and garnish with fresh cilantro, saffron threads, and cardamom pods. Serve hot with a dollop of raita on the side.
