Step-by-Step Instructions

1
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes.
2
Add the minced garlic and cook for 1 minute, until fragrant.
3
Add the mixed vegetables and cooked chicken, and stir-fry for 2-3 minutes, until the vegetables are tender-crisp.
4
Push the vegetables to one side of the pan, and add the remaining 1 tablespoon of vegetable oil. Crack in the eggs and scramble them until cooked through, breaking them up into small pieces as they cook.
5
Mix the eggs with the vegetables, and add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice with the vegetables and eggs for 5-7 minutes, until the rice is heated through and starting to brown.
6
Add the soy sauce, oyster sauce, salt, and pepper to the pan, and stir-fry for another minute, until the rice is well coated with the sauce.
7
Transfer the Indonesian Fried Rice to a serving platter, and garnish with green onions, tempeh, and a fried egg. Serve immediately.
