Step-by-Step Instructions

Prepare the fillings by cooking the shrimp and pork in a pan with a little oil until they are fully cooked. Then, chop them into small pieces and set aside. Cook the rice noodles according to the package instructions and set aside.

Prepare the vegetables by peeling and julienning the carrots and cucumber. Chop the mint and basil leaves finely and set aside.

Assemble the summer rolls by filling a large bowl with warm water. Place a rice paper wrapper in the water for about 10-15 seconds, until it becomes soft and pliable. Remove the wrapper from the water and place it on a clean surface.

Place about 1/4 cup of the cooked noodles in the center of the wrapper, leaving a 1-inch border around the edges. Add a few pieces of the cooked shrimp and pork, some chopped carrots and cucumber, and a sprinkle of mint and basil leaves.

Fold the bottom half of the wrapper up over the fillings, then fold in the sides and roll up the wrapper to form a tight cylinder. Repeat with the remaining wrappers and fillings.
