Spanish Croquetas

A traditional Spanish tapas dish, croquetas are deep-fried balls filled with a creamy bechamel sauce and shredded ham. These crispy, bite-sized morsels are perfect for snacking and can be easily customized with various fillings. Typically served as an appetizer or snack, croquetas are a staple in Spanish cuisine and are loved for their crunchy exterior and soft, cheesy interior. They can be enjoyed with a variety of dipping sauces, such as aioli or salsa verde.

Step-by-Step Instructions

1
In a large saucepan, heat the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
2
Add the flour and cook for 1-2 minutes, stirring constantly.
3
Slowly add the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook until thickened, about 5 minutes.
4
Remove the sauce from the heat and stir in the bechamel sauce, ham, and shredded cheese. Let cool to room temperature.
5
Once the mixture has cooled, cover it with plastic wrap and refrigerate for at least 30 minutes.
6
When ready to fry, heat the oil in a large saucepan to 350°F. Using a spoon, drop small balls of the mixture into the oil and fry until golden brown, about 3-4 minutes per side.
7
Drain the croquetas on paper towels and serve warm with a side of aioli or salsa verde for dipping.
