Step-by-Step Instructions

1
In a large bowl, whisk together the yogurt, lemon juice, ghee or vegetable oil, garam masala, cumin powder, coriander powder, cayenne pepper, salt, and black pepper. Add the chicken breast and mix well to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
2
Preheat a grill or grill pan to medium-high heat. Remove the chicken from the marinade, letting any excess liquid drip off. Grill the chicken for 6-8 minutes per side, or until it reaches an internal temperature of 165°F.
3
While the chicken is grilling, prepare the cucumber raita. Peel and grate the cucumber, then squeeze out as much liquid as possible. In a bowl, mix together the grated cucumber, yogurt, salt, and cumin powder. Refrigerate until ready to use.
4
Once the chicken is cooked, let it rest for a few minutes before slicing it thinly. Warm the flour tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.
5
Assemble the wraps by spreading a spoonful of cucumber raita on each tortilla, followed by a few slices of grilled chicken, some pickled carrots, and a sprinkle of cilantro. Serve immediately and enjoy!
