Step-by-Step Instructions

Preheat the oven to 325°F (160°C). Slice the beef top round into 1/4-inch thick slices and season with salt and pepper.

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside on a paper towel-lined plate.

In the same skillet, sauté the onion until translucent. Add the pickles and cook for an additional 2 minutes.

To assemble the Rouladen, lay a beef slice flat and spread a tablespoon of the onion-pickle mixture onto the center of the beef. Add a few strips of bacon on top of the mixture and roll the beef into a tight roll. Repeat with the remaining beef slices and filling.

In a large Dutch oven, heat the butter over medium heat. Add the Rouladen rolls and cook until browned on all sides, about 5-7 minutes per side.

Add the beef broth to the Dutch oven and bring to a boil. Cover the pot and transfer to the preheated oven. Cook for 2 1/2 hours, or until the beef is tender and falls apart easily.
