Step-by-Step Instructions

Prepare the eggplant by slicing it into 1/4-inch thick rounds. Place the slices on a wire rack set over a baking sheet or tray. Sprinkle both sides of the eggplant slices with salt to draw out excess moisture. Let the eggplant sit for 30 minutes to allow the salt to work its magic.
