Step-by-Step Instructions

Start by preparing the cabbage leaves. Remove the tough outer leaves and blanch the cabbage in boiling water for 5 minutes. Then, remove the cabbage from the water and let it cool down. Once cooled, remove the leaves from the cabbage head and set them aside.

In a large bowl, combine the ground beef and pork, onion, carrot, celery, tomato paste, beef broth, vinegar, sugar, salt, and black pepper. Mix well until everything is fully incorporated.

To assemble the Rollmöpse, lay a cabbage leaf flat on a work surface and place about 1 tablespoon of the meat mixture in the center of the leaf. Fold the stem end over the filling, then fold in the sides and roll the leaf into a neat package. Repeat with the remaining cabbage leaves and meat mixture.

In a large pot, bring the beef broth to a boil and then reduce the heat to a simmer. Carefully place the Rollmöpse in the pot, seam-side down, and cook for 25-30 minutes, or until the cabbage is tender and the filling is cooked through.

While the Rollmöpse are cooking, prepare the pickled beet and mustard sauce. In a small bowl, combine the pickled beets, mustard, and a pinch of salt and pepper. Mix well and set aside.
