Step-by-Step Instructions

Preheat the oven to 300°F (150°C). Rinse the duck legs under cold water, pat them dry with paper towels, and season with salt, black pepper, and a sprinkle of thyme.

In a large Dutch oven, heat the olive oil over medium heat. Sear the duck legs until browned on all sides, about 5-7 minutes per side. Remove the duck legs from the pot and set them aside.

Reduce the heat to low and add the garlic cloves to the pot. Cook, stirring occasionally, until the garlic is tender and lightly caramelized, about 15-20 minutes.

Add the bay leaves to the pot and stir to combine. Return the duck legs to the pot, cover, and transfer to the preheated oven. Baste the duck legs with the garlic-infused oil every 30 minutes, until the meat is tender and falls off the bone, about 2-1/2 to 3 hours.
