Step-by-Step Instructions

1
Preheat the oven to 375°F (190°C). In a large mixing bowl, combine the flour, salt, and cold unsalted butter. Use a pastry blender or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
2
Add the ground beef, onion, scotch bonnet peppers, thyme, allspice, and cayenne pepper to the mixing bowl. Use your hands or a wooden spoon to mix the ingredients until they are just combined. Be careful not to overmix.
3
On a lightly floured surface, roll out the pastry dough to a thickness of about 1/8 inch. Use a round cookie cutter or the rim of a glass to cut out circles of dough. You should be able to get about 6-8 circles.
4
Place a tablespoon or two of the beef filling in the center of each dough circle. Brush the edges of the dough with a little bit of water, then fold the dough over the filling to form a half-moon shape. Press the edges together to seal the patty.
5
Place the patties on a baking sheet lined with parchment paper, leaving about 1 inch of space between each patty. Brush the tops of the patties with a little bit of egg wash (beaten egg mixed with a little bit of water).
6
Bake the patties in the preheated oven for 20-25 minutes, or until they are golden brown. Serve hot with a side of mango salsa and a sprinkle of fresh thyme.
