Step-by-Step Instructions

1
In a large mixing bowl, combine the flour and cold unsalted butter. Use a pastry blender or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
2
Gradually add the ice-cold water to the flour mixture, stirring with a fork until the dough comes together in a ball.
3
Turn the dough out onto a lightly floured surface and roll out to a thickness of about 1/8 inch.
4
In a large skillet, heat a couple of tablespoons of oil over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.
5
Add the chopped onion to the skillet and cook until it's softened and translucent.
6
Stir in the thyme and season with salt and pepper to taste.
7
To assemble the pasties, place a spoonful of the beef and onion filling onto one half of the dough circle.
8
Brush the edges of the dough with a little bit of egg wash, then fold the other half of the dough circle over the filling.
9
Use a sharp knife to cut a few slits in the top of the pasty, then brush with a little bit of egg wash.
10
Place the pasties on a baking sheet lined with parchment paper and bake in a preheated oven at 375°F for about 25-30 minutes, or until the crust is golden brown.
