Preheat the oven to 275°F (135°C). Rinse the duck legs and pat them dry with paper towels. Season the duck legs with salt and black pepper.

In a large Dutch oven, heat the duck fat over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the thyme and rosemary and cook for an additional minute.
