Step-by-Step Instructions

1
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Rinse the cod fillets and pat them dry with paper towels. Season the fish with salt and pepper. Place the fish on the prepared baking sheet and bake for 12-15 minutes or until cooked through. Remove from the oven and set aside.
2
While the fish is baking, prepare the cauliflower rice. Rinse the cauliflower and remove the leaves and stem. Cut the cauliflower into florets and pulse in a food processor until the cauliflower resembles rice. Heat 1 tablespoon of oil in a large skillet over medium heat. Add the cauliflower rice and cook for 5-7 minutes or until tender and lightly browned. Season with salt and pepper to taste.
3
To make the slaw, shred the purple cabbage and slice the red onion. In a large bowl, combine the shredded cabbage and sliced onion. Squeeze the juice of 1 lime over the slaw and toss to coat. Season with salt and pepper to taste.
4
To assemble the bowls, place a scoop of cauliflower rice in the bottom of a bowl. Top with a piece of baked fish, a spoonful of slaw, and a slice of avocado. Sprinkle with cilantro and a dollop of lime crema. Serve immediately and enjoy.
