Step-by-Step Instructions

1
Bring a large pot of salted water to a boil and cook the macaroni according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the macaroni.
2
In a large skillet, melt the butter over medium heat. Add the sliced Falukorv sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the skillet and set aside.
3
In the same skillet, add the flour and whisk together with the butter to make a roux, cooking for 1-2 minutes. Slowly pour in the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook until thickened, about 5 minutes.
4
Remove the skillet from the heat and stir in the cheddar cheese until melted and smooth. Season with paprika, salt, and black pepper to taste.
5
Add the cooked macaroni to the cheese sauce and stir until well combined. If the sauce is too thick, add a little of the reserved pasta water. Return the skillet to medium heat and cook until the macaroni is coated in the cheese sauce.
6
Slice the cooked Falukorv sausage and serve on top of the macaroni and cheese sauce. Garnish with chopped fresh parsley and a dollop of sour cream on the side.
