Preheat your oven to 375°F (190°C). Peel the potatoes and slice them into 1/4-inch thick rounds. Place the potatoes in a large bowl and sprinkle with a pinch of salt and a few grinds of black pepper. Toss the potatoes to coat them evenly with the seasoning.

In a large skillet, cook the diced bacon over medium heat until it's crispy. Remove the bacon from the skillet and set it aside on a paper towel-lined plate. Leave the grease in the skillet and add the diced onion. Cook the onion until it's translucent and starting to caramelize.
